We will learn how to make mochi!
1 ½ cups mochiko (glutinous rice flour)
¾ cup white sugar
1 ½ cup water
Medium mixing bowl
Mix the water and sugar together in a microwave-safe bowl. Then slowly add in the Mochiko flour while stirring vigorously. Stir until the mixture is blended.
Loosely cover the bowl with plastic wrap and microwave for 6 min.
Prepare your work surface with plastic wrap and coat liberally with potato starch.
Let the mochi cool for a few minutes before handling. Carefully remove the plastic wrap, avoiding the steam that escapes. Remove the mochi from the bowl and flatten with a rolling pin.
Break off a small piece of the mochi and roll it into a ball to eat by itself. If you are filling the mochi, flatten a piece into a small pancake, place a small amount of filling in the middle, and pinch the corners to form a ball. Roll in potato starch as necessary.
